Hang Ten White

Sales Notes: This blend is ideal to relax on the patio with a few friends or bring to a Thai restaurant to balance the heat of the dish. Cool and refreshing a wine to serve for a party.

Tasting Notes: New world, an expression of a fruit forward (noticeable residual sugar) wine from the muscat, the chard give it some weight and depth in the middle and the sauvignon gives the acidity to bring all into balance. The acidity will also act as the palate cleanser to get you ready for the next pairing

Cheese Pairing: Blue Cheese: big and big, the relative sweetness balances well with the bold flavors of the blue cheese

Food Pairing: Grilled jumbo shrimp with kimchi miso butter
Why this works? The balanced wine giving many notes of citrus added to the sweet notes will work with the saltiness of the miso and kimchi

Fun Pairing: Kettle popcorn
Why this works? This allow the pairing to work on multiple levels, sweet and slaty of the popcorn works with the acidity and sweetness of the wine

Sales Notes: This is a great food and wine lovers blend, giving you the best of both worlds, enough boby and tannis to handle a wide range of foods, but the balance with fruit to be the meal by itself.

Cheese Pairing: Feta cheese and calamata olives: this is the perfect pairing after a long day at work, add some olive bread and your set
Why it works? The salt in the feta and brine balance with the tannins and bold fruit of the wine

Food Pairing: Pizza, broccoli rabe and Italian sausage
Why this works? The tannins work well against the cheese and the cheese. the large fruit balances well with the broccli rades green notes and slight bitterness

Fun Pairing: Deep fried ravioli with red meat sauce for dipping
Why it works? It just works, sinful delightful cheese, oil and flavors come together for a simple but wonderful experience

Old Vine Zinfandel

Sales Notes: The famous thick, gnarled and twisted old Zinfandel vines of Lodi in California’s Central Valley contribute to intense concentrated flavors in the grapes. The location of the central valley offer intense heat adding to the wines acidity. The zinfandel grape is ideal for growth in this region.

Cheese Pairing: earthy brie
Why this works: The creaminess of the brie does not overpower the wine the light tannins will cleanse the pallet and the subtle earthy notes will compliment the fruit

Why it works: The earthiness of the lamb, the spiciness from the cinnamon and chili powder works great with the boldness of the OV Zin

Napa Valley Stags Leap Merlot

Sales Notes: The classic napa region of stags leap, some of the best fruit is grown here, cool morning intense heat in the afternoon, the cabs and merlot do very well, info tense flavors and balanced structure.

Why this works? The balance of acidity with the cream and the fullness of the fruit flavors found in the wine

Food Pairing: Beef dishes – steak, roasts, ribs, burgers. Poultry with rich sauces, lamb dishes, game birds, pasta with tomato sauces, hard firm cheeses, hearty stews, and bean-based dishes

Fun Pairing: Dates stuffed with creamy gorganzola

Sonoma Dry Creek Chardonnay

Sales Notes: Just west of the main Sonoma growing region is dry creek, located in Healdsburg, Sonoma County, California. . Dry Creek Valley is mainly known for its signature varietal, Zinfandel, because of the intense heat for most of the day. The heat allows the chardonnay to develop into large fruit forward wines with nice body structure and acidity.

Cheese Pairing: 5 yr gouda
Why this works? The intense cheese is balanced by the subtle sweetness of the wine

Food Pairing: With a bold flavor and mouth-filling fruit, it will compliment almost any meal, including grilled chicken, fresh salmon, lobster, or pasta with cream sauces.

Fun Pairing: roasted elephant garlic drizzled with EVOO and served with warm croissants. Additional pairing: Butter toffee popcorn clusters. Why it works? Toffee and nuts, two of the elements of chardonnay

California Petite Sirah/Zinfandel

Sales Notes: The new classic from California, this blend has transformed the wines from ca, welcoming width big fruit and structure you don't always need food with it, in fact sometimes it is the meal. If food was on your mind there isn't much that doesn't pair well with.

Cheese Pairing: baked brie with carmelized pecan
Why this works? The cream of the warm Brie in a flakey crust and the pecans hits so may no rest in this wine. The fruits are dark upfront with plum and a little spice. The red fruit finish nicely

Food Pairing: Apple Cider Brined Thick-Cut BBQ Pork Chops
Why this works? The apple brine brings to balance the heavy fruit dark fruit flavors. Using it acidity to cut the bbq sauce over the pork chops this creates and amazing flavor

Fun Pairing: Dark chocolate with salt
Why it works? The dark chocolate will pair well with the black and red fruits in the wine, the tannins will fill the gap or intensity and the salt will balance with the pepper notes in the end

Lodi Cabernet

Sales Notes: The Lodi region is inland central valley, intense heat throughout the day make the Cabernets also intense, high tannins and acidity with big fruit.

Cheese Pairing: Parmigiano reggiano,
Why it works? Go intense the wine can handle it, the tannin and acidity will counter the salt an intense flavors of this bold cheese

Food Pairings: Flavorful beef dishes including steak and roasts. Also spareribs and lamb, game dishes including pheasant and venison, firm cheeses such as cheddar and hard cheeses such as parmigiano and romano.

Fun Pairing: Chocolate cake with cherry filling and mocha frosting Why it works? The tannin in the cab will balance with sweetness of the mocha frosting picks up the coffee notes in the wine as the cherry will bridge. Additional Fun pairing, fun girl scouts thin mints when in season

Washington Columbia Valley Riesling Wine

Sales Notes: One of the three great growing regions for rieslings of the world, Germany, New York and Washington, the slate soil gives the Riesling a clean crisp feel with the acidity that makes these wines one of the best for food pairing.

Cheese Pairing: Roasted apricot with feta honey and chopped walnuts
Why it works? The sugars that caramelize during the roasting balance a little sweetness to the wine, the feta's salt with the slight honey balance the wine acidity

Food Pairing: Chicken with light sauces, shellfish, pasta with cream sauce, Asian noodle dishes, shrimp salad, steamed vegetables, chowders, delicate broiled fish (sole, snapper, etc.)

Fun Pairing: Spicy gaucamole
Why this works? The coolness of the wine balances the heat of the guacamole as the acidity will cleanse the creaminess of the avocado

Washington Yakima Valley Pinot Gris

Sauvignon Blanc

Why it works? Typical of a California Sauvignon blanc the grasses notes alway balance with the fruit, what better then spinach vibrant green flavor, as the acidity cleanses the palette of the fat of the eggs

Fun Pairing: Deviled eggs, chicken, mustard and cayenne make up the spiciness,capers, mustard, celery seed and paprika
Why it works? ,get along great with sauvignon blanc which means we need a fruity wine to offset the heat

Sonoma Pinot Noir

Why it works? The light creaminess of the Brie is offset but the light tannins and acidity. There is a natural subtle earthy flavor in both

Food Pairing: Wild mushroom lasagna
Why it works? The Pinot will always offer a fruitiness with an earthy quality, the cheese will be offset by the acidity, which will also balance the acidity in the sauce, the mushrooms flavor is the bridge found in the wine and food

Fun Pairing: roasted elephant garlic drizzled with EVOO and served with warm croissants
Why this works? The roasted garlic mellows when mixed with oil and spread on warm croissants, the Pinot green flavors notes will pop against the garlic and the fruits will balance the element
