Ice Wine

Color: White or Red, depending on the grape

Ice wine refers to style of wine made with frozen grapes. Traditional methods of making ice wine dictate that grapes must be left to freeze while still on the vine, which freezes water in the grapes, but not the sugars. The grapes are then harvested and pressed, which makes for a more concentrated, sweeter wine. Germany is especially famous for its ice wines, which are delicious, complex, and very expensive.

Another method of creating "ice wine" is to harvest the grapes before the weather changes, and freeze them at about 20°F. This process's technical name is cryoextraction; this method, too, can produce delicious, aromatic wines worthy of any dessert.
