Soft Cheeses
Brie. Soft, rich cheeses, like Brie and triple-cream cheeses, do well with a full-bodied white wine, like Chardonnay. If you're looking for a red wine with your rich cheese, try a Pinot Noir.

Chèvre. Fresh goat cheeses like chèvre pair well with crisp, acidic whites, like Sauvignon Blanc or Pinot Grigio.

Muenster. The original Muenster cheese comes from France, and is a soft, strongly flavored cow’s cheese. Try it with an aromatic Gewurtztraminer, or a spicy Zinfandel.

Medium Cheeses
Feta. Feta is a cheese originally from Greece, and can be made from cow’s, goat’s, or sheep’s milk, or a mixture of all three, depending on the variety. Its saltiness may not go well with a strongly tannic red, but try feta with a softer red wine, like Pinot Noir or Montepulciano.

Manchego. Manchego is a sheep’s milk cheese from Spain. Aged for at least three months, Manchego can develop stronger flavors the longer it rests. It is semi-firm, rich and golden. Try it with a Rioja or Merlot.

Mahon. Mahon is a semi-cured Spanish cheese from the island of Minorca; made from cow's milk, this cheese has a buttery tang and a slight saltiness. Try a light red, like a Pinot Noir, or a medium-bodied Spanish Rioja, or even a rose or blush wine, with Mahon.

Hard Cheeses
Cheddar. Cheddar cheese is a cow’s milk cheese; you can find it semi-hard to hard, and mild to sharp. Try a mild Cheddar cheese with a creamy, full-bodied Chardonnay; a sharp, hard cheddar cheese pairs well with Cabernet Sauvignon.

Parmigiano Reggiano. Parmigiano Reggiano is a hard, flavorful cheese that pairs well with a tannic red wine, like a Cabernet Sauvignon or an Amarone della Valpolicella.

Pecorino Romano. Pecorino Romano is a sheep’s milk cheese from Italy; it is hard, sharp and salty. Try Pecorino Romano with an Italian red like Brunello or Chianti.

Blue Cheeses
Dessert wines are made for blue cheeses. The combination of saltiness and sweetness works wonderfully. Roquefort, Gorgonzola, and Stilton cheeses work well with ice wines, late harvest wines, and especially Ports.
